  • For Serving:
    • Cooked basmati rice or naan bread
    • Fresh coriander leaves, chopped
    • Lime wedges

Instructions:

  1. Prepare the Aromatics:
    • Heat the olive oil in a large pot over medium heat.
    • Add the chopped onion and sauté until translucent, about 5 minutes.
    • Add the minced garlic and ginger, and cook for another 2 minutes until fragrant.
  2. Add the Spices:
    • Stir in the ground cumin, ground coriander, turmeric, and smoked paprika.
    • Cook the spices for 1-2 minutes, stirring frequently, until they release their aroma.
  3. Cook the Pumpkin:
    • Add the cubed pumpkin to the pot and stir to coat with the spices.
    • Cook for about 5 minutes, allowing the pumpkin to start softening.
  4. Simmer the Curry:
    • Add the chickpeas, diced tomatoes, coconut milk, and vegetable broth to the pot.
    • Stir well to combine all the ingredients.
    • Bring the mixture to a simmer, then reduce the heat to low.
    • Cover the pot and let it simmer for 25-30 minutes, or until the pumpkin is tender.
  5. Season and Serve:
    • Season the curry with salt and pepper to taste.
